cracked kale

Quick and easy recipe for my favorite snack at the moment. I've really been going through my usual cold weather cravings. That is, before the polar vortex hits, my body craves snacks and anything carb-filled. So the other night when I looked into my fridge and found nothing but kale and a other legumes, I decided to make this snack. It's a healthier alternative to running downstairs to the bodega and picking up a bag of my favorite salt and vinegar chips. The combination of roasted pumpkin seeds and crispy kale with a kick really helps fight that salty, carb-filled craving. Great alternative especially as the holidays approach. --

Cracked Kale One bunch of dinosaur kale 1/2 teaspoon "slap ya mama" seasoning (a mix of paprika and salt) 1 teaspoon olive oil 1 1/2 tablespoon pumpkin seeds

Preheat oven to 200 degrees.  Remove stems from kale, then slice into 1/2 inch pieces.  Place sliced kale into a large bowl, add olive oil.  Give the kale a quick massage by gently squeezing and releasing back into the bowl (3-4 times).  Add seasoning and pumpkin seeds to the kale and give it a quick toss to combine everything.  Spread kale and pumpkin seeds evenly onto a large baking sheet.  Bake for 200 for 10-15 minutes or until kale are crispy.
