fresh roasted figs with balsamic honey

The month of October normally brings about a spike in sweet consumption - new pumpkin recipes to try, revisiting my obsession with candy corn, and of course, an excuse to hoard bags of Halloween candy (preferably the variety bags of chocolate).  Since it's harder to curb the sweet tooth than it is to incorporate healthier options, I decided to put together this simple recipe of sweet fresh figs, counterbalanced with a drizzle of balsamic vinegar, and a few scoops of creamy goat cheese.  A perfect snack for a late afternoon or a great side to a Sunday roast.

Fresh Roasted Figs with Balsamic Honey serves 4 1 pack of Figs (about 12), halved 2 tbsp Goat Cheese 1/4 cup Balsamic Vinegar 2 tbsp Honey 2 tbsp Butter, cubed 1 tsp Chives, finely chopped 2 tbsp olive oil 1/2 tsp salt

-  Preheat oven at 375.  In a medium bowl, toss figs with salt, pepper, olive oil until evenly coated.  Spread figs out on baking sheet, and roast for 15 minutes. - In a small saucepan on medium-low heat, melt butter, add balsamic vinegar and honey, stirring frequently until all ingredients are well incorporated. Remove figs from oven, drizzle with balsamic mixture, top with goat cheese, and chives.
